“No, no. Not the bunny,” says a woman to her server, responding to an early fall special of braised rabbit loin stuffed with Italian chestnuts, with a side of rabbit ravioli, in deeply meaty rabbit pan sauce. I smiled, having already ordered the dish, on special.

At Girasole it’s not necessary to open the menu. The printed version doesn’t change, which means you must listen to the long list of specials. (Thankfully, on busy weekends there is a print out.)

A salad (on special) has the balanced proportions of a Zac Posen dress: crisply American with of-the-season figs from Chantilly, mixed greens, house-cured pancetta and tangy chevre. Earlier in the year, pinky-purple-tinged octopus, (on special) colored from a braise in red wine, was draped in Italian oil with beautiful summer microgreens performing as edible art.

Scoop: Desserts don’t change as seasonally, but really, chocolate is never out. A slice of gianduia, dense as ganache, marries chocolate and hazelnut in such a pure fashion that it will make you rethink your devotion to store-bought Nutella.

Dinning In Middleburg – Kliman Online

DINING IN MIDDLEBURG?:

Todd – My husband and I are considering a mini staycation/babymoon out at the Salamander Resort in Middleburg. The resort looks wonderful, but I dont think we want to eat on premise (eek – terrible Post write up.. have you been out?).

So the question, is there anywhere wonderful in Middleburg or even nearby you would recommend? Have you heard anything about the latest with Ashby Inn’s chef?

Todd Kliman:

What I’d do, if I were you, is book a table at Girasole, in the Plains.

It’s about an eight-mile drive south — take you about 15 minutes.

And then you’ll settle in to a cozy, soft-lit dining room for a good, relaxing meal of casual Italian cooking. It’s an enjoyable restaurant. Not a splurge of a meal kind of place, not a gastronomic getaway — but the kind of place you wish were closer to the city, because you could see yourself going once a month.

Fall Trip to Sicily

Posted on

Travel to Sicily and you’ll be taken back in time to the beginning of the Greek empire. In a small group setting, you’ll learn about how the land was settled by the Greeks and then inhabited by the Corinthians, Romans, Arabs, Normans, French, and Spaniards before it became part of Italy.

As a small group, we’ll discover the island for ourselves through its food, architecture, culture, history, and people. The ten-day journey will begin in the capital city of Palermo along the western coast of the island. We are introduced to the Island of Sicily as we travel the small, winding streets of the bustling city exploring the open-air food, clothing, and spice markets. We travel along the coast, stopping in the port town of Trapani, an ancient city that has been vital to the island’s salt trade and tuna fishing industries. Then, we travel to Erice, Siracusa, and Agrigento where we see ancient Greek temples comparable to those in Athens. Our journey continues onto the towns of Noto, known for its gelato, and Taormina, next to the snowy slopes of Mt. Etna.

Our accommodations each night are at an Italian country home, referred to by Italians as an agriturismo, where we enjoy home cooked meals, comfortable furnishings, and the companionship of our Italian hosts and guides. Reserve your spot soon for our upcoming trip. We will depart on October 21st and return on November 1st. The cost of the trip, excluding airfare and taxes, is $3,200. Visit www.girasole-italy.com for complete information and the itinerary. Call Lydia Patierno at 540.253.5501 to make your reservation.

Buon Viaggio!

Vietti Wine Dinner

Posted on

On June 2nd at 7 pm, Mike Hendry from Hendry Wines will host a fixed-priced wine dinner at Panino Restaurant in Manassas. The Hendry family has been farming the same vineyard in Napa since 1939. The Hendry Ranch is composed of 114 acres of vineyard situated in the hills north west of Napa. This latitude in the valley experiences substantial marine influence, and allows us to grow 10 different varietals, each carefully distributed among our 47 vineyard blocks. All Hendry wines are made from estate grapes, and 2011 will be the 20th vintage of the Hendry label. Through the subtle use of oak, and restraint in ripeness, our wines are crafted to highlight the terroir of the vineyard.

The dinner will feature the following courses and wine pairings:

Clams Gratinate
Hendry Albarino 2012

Duck breast wrapped in swiss chard and ratatouille with local vegetables
Hendry Pinot Noir 2009

Roasted Rabbit with Italian Chestnuts
Hendry Chardonnay ‘Barrel Fermented’ 2010

Braised Pork Belly with Cider Reduction
Hendry Zinfandels

Roasted Loin of Lamb with Seasonal Vegetables
Hendry Red Wine

Dolce

The cost of the dinner is $100 per person, exclusive of tax and gratuity. To make your reservation, call Panino at 703-335-2566.
