Francesca Vaira of G.D. Vajra Winery will once again host Girasole’s annual White Truffle Dinner.  The famed white truffle of the Piedmont region will be featured in each of the six courses, paired with wines from G.D. Vajra Winery. The cost is $250 per person, exclusive of tax and gratuity.

The white or Alba truffle (because they are found in the city of Alba in the Piedmont region of Italy) is known for its enigmatic smell, with hints of fermented honey, hay, garlic, spices, and wet earth. At Girasole, our white truffles are hunted by Ezio and his prized dog, Jolly.  They are overnighted directly to us just before the dinner and it’s a package that we eagerly await each year because we know that Chef Patierno will transform simple ingredients into complex dishes with this aromatic and flavorful gem. The evening will start with cocktails and an antipasto of Baccalà Mantecato with aged Balsamic from Modena. Then Chef Patierno will feature the following courses, each with shaved white truffles and wine pairings by G.D. Vajra:

Roasted Cauliflower Fonduta
Housemade Tortellini in Brodo with a Poached Farm Egg
Piedmontese Carnaroli Risotto
Maine Lobster Poached in Butter
Chicken Involtini
Hazelnut Torta with White Truffle Gelato
