Sixteen years ago, The Vaira and Patierno families were introduced by the late wine importer, David Bryant. Within minutes, Joel Patierno, son of Lydia and Lou, was working at the G.D. Vajra Winery. A few years later, daughter Gabriella followed. Aldo and Milena, owners of G.D. Vajra Winery soon introduced Lydia and Lou to Ezio, a prized truffle hunter in the Piedmont region. Soon an annual dinner tradition was born with the first White Truffle Dinner held at Panino restaurant.

Ezio’s famed white truffle of the Piedmont region will be featured in each of the six courses, paired with wines from G.D. Vajra Winery. Each wine will be introduced by Francesca and Jason Bise of The Country Vintner. The six-course menu and G.D. Vajra wine pairings follows:

Of note, the N.S. della Neve Rose Brut has roots to our area. In 1787, Thomas Jefferson, Ambassador to France at the time, stopped in Turin to taste Nebbiolo for the first time. He described the wine as “about as sweet as the silky Madeira, as astringent on the palate as Bordeaux, and as brisk as Champagne.” Being in love with wine, G.D Vajra uses a “Metodo Classico” that embraces this ancient and forgotten history to produce a fragrant sparkling wine, unveiling in the nose and palate the decisive character of the Nebbiolo and the gentle elegance of Pinot Noir. If in Charlottesville, you can find the fourth course pairing, N.S. della Neve Rosé Brut, at the Monticello gift shop! Of course, you can also purchase any of the featured wines at the dinner.

Francesca Vaira of G.D. Vajra Winery will once again host Girasole’s annual White Truffle Dinner.  The famed white truffle of the Piedmont region will be featured in each of the six courses, paired with wines from G.D. Vajra Winery. The cost is $250 per person, exclusive of tax and gratuity.

The white or Alba truffle (because they are found in the city of Alba in the Piedmont region of Italy) is known for its enigmatic smell, with hints of fermented honey, hay, garlic, spices, and wet earth. At Girasole, our white truffles are hunted by Ezio and his prized dog, Jolly.  They are overnighted directly to us just before the dinner and it’s a package that we eagerly await each year because we know that Chef Patierno will transform simple ingredients into complex dishes with this aromatic and flavorful gem. The evening will start with cocktails and an antipasto of Baccalà Mantecato with aged Balsamic from Modena. Then Chef Patierno will feature the following courses, each with shaved white truffles and wine pairings by G.D. Vajra:
