Join Our Team

We are currently accepting applications for a full-time line cook and kitchen staff position.

We are a family owned and operated restaurant with a small but dedicated and professional staff. Our menu’s offer rustic, regional Italian dishes in a fine dining setting in the small community of The Plains, VA (located approximately 15 minutes from Haymarket, 10 minutes from Marshall, and 15 minutes from Middleburg). All of our bread, pastas, soups, sauces, and desserts are made in house, with many of our vegetables grown on sight in a modest backyard garden when possible. Our chef and owner is a graduate of the Culinary Institute of America and has over 30 years of experience in DC, Virginia, Pennsylvania, Iowa, France, and Italy.

The ideal candidate will be motivated, professional, collegial, and hardworking. Upscale dining work experience is preferred. Most importantly, the right candidate will see a future for him or herself in our small business, and willing to take on additional responsibilities over time based on need and interest.

Specific responsibilities include:
• Line cooking experience is preferable; however, on-the-job training can be provided to the motivated candidate with a good work history.
• Be an integral part of our small kitchen team and provide support and creativity in any area needed, including preparing dishes for standard menu items, preparing salads, making bread and pasta, cooking on the line, and cleaning the kitchen at the end of each shift.
• Manage inventory, identifying items to be ordered, and ensuring products for standard menu items are on hand.

Must be available 5 days a week (with Friday, Saturday, and Sundays being 3 of those days), and be a team player who works well in a small kitchen environment.

Champagne of the North! A traditional Berliner style wheat beer that is refreshing and complex, delicately fruity, and subtly sour. Germany.

Pizza rustica season is here! A rustic, savory torte made on Good Friday to celebrate the end of Lent and to be enjoyed over the Easter holiday. It’s a Girasole tradition that stems from Chef Lou’s own family traditions. 

Typical to the southern regions of Italy, Chef Lou’s recipe comes from his aunt Lena, his father’s sister, and not from his mother who was from the northern region of Liguria. Although Chef Lou’s recipe has been altered slightly as a result of the conveniences of modern life, it remains mostly true to that of aunt Lena’s. Eggs, fresh and aged cheeses (aunt Lena used what she called basket cheese, a fresh cheese which was made in a basket), mixed cured meats including spicy salami and prosciutto, all wrapped in what used to be suet bread but Chef Lou uses a flaky, buttery pastry crust instead, and baked. 

Absolutely delicious cold or heated, but only ever enjoyed over the Easter holiday! We still have some availability for Easter Sunday. We are open 12:00-4:30pm and are offering our regular dinner menu with featured Chef’s specials. Find the full menu at the link in our bio.
