Don’t let the name of this dish fool you, there are no mushrooms in melanzane a funghetto, also known by its Neapolitan dialect name, melanzane a fungetiello. The name refers to the way in which the eggplant is cooked, reminiscent of sauteed mushrooms. Chef Lou became familiar with this recipe along time ago, when he worked alongside many Neapolitan and southern Italian chefs at Tiberio’s located on K Street. Traditionally prepared as a contorno, or side dish, melanzane a funghetto is an incredibly versatile dish. Serve as is as an appetizer or contorno, on crostini, in a sandwich, or with grilled fish or meat.

Please note that we are closed on Monday so you would have to pick up your pantry items by Sunday, September 13th.
