Originally made by Lydia’s grandmother, chef Lou fell in love with this recipe almost as quickly as he fell for Lydia! Pollo alla Maceratese is a roast chicken dish from the city of Macerata in the region of Le Marche, where Lydia’s family immigrated from. An ancient dish that has been passed down from mother to daughter, it was originally reserved for special occasions, over the years being adapted and adjusted to what was readily available in Italy, and in a small town in western Pennsylvania.
The price is the cost of the pantry ingredients listed below, suggested for 2 people.
