Il Borro’s vineyards sit in the Valdarno hills of Tuscany, an area which boasts unique soil and climate conditions. The area not only reflects a long-standing history, but also an ancient vocation to the making of great wines. Cosimo III, the Gran Duke of Tuscany, issued an edict which designated this area for the production of high-quality wines in 1716. Three hundred years later, in 2017, the Valdarno di Sopra DOC was re-established and includes those local cellars committed to organic winemaking for future generations.
In 1993, Ferruccio Ferragamo acquired the Il Borro Estate, completely restoring the medieval hamlet for the purpose of preserving and enhancing the vineyard, the history and traditions of the area, and the surrounding natural environment. Today, the Il Borro Estate is managed by two of Ferruccio’s children, Salvatore and Vittoria. The sibling’s commitment to organic practices and sustainability dominates every decision made to further enhance the Estate’s authenticity and preservation of culture and nature. Each of the five courses have been thoughtfully created by Chef Lou to accompany and compliment the wines of Il Borro Estate.
