Vignarola, or braised Spring vegetables, is a traditional Roman dish found only when all of the first green vegetables are coming into season. Chef Lou will be preparing his vignarola with poached eggs to make a more substantial meal, but vignarola can be enjoyed as a side dish, with pasta, with meat or fish, room temperature or still warm. The price is the cost of the pantry ingredients listed below, suggested for 2 people.
What you will need from our Pantry:
Spring vegetables, cooking wine, herbs, 2 farm eggs $30
Pancetta $14 per lb
