Join chef Lou for a virtual cooking class on Monday, August 31st! Chef Lou will be making one of his favorite pasta dishes and arguably one of his best! Bucatini all’Amatriciana is a pasta dish named for the town from which it comes, Amatrice, a mountain town outside of Rome. Amatriciana is one of the region’s most famous pasta dishes (along with Gricia, Cacio e pepe, Arrabbiata, and the most famous, Carbonara). All are quick and easy to make but must be cooked with the best ingredients. For his Amatriciana, Chef Lou uses homemade marinara sauce made with the less acidic San Marzano tomatoes, the more flavorful guanciale (cured pork jowl) as opposed to pancetta (cured belly or the bacon cut), durum wheat bucatini pasta imported from le Marche, and a blend of Pecorino Romano and Parmigiano Reggiano for topping. The price is the cost of the pantry ingredients listed below, suggested for 2 people.
What you will need from our Pantry:
House made marinara $15 per quart
Guanciale $16 per lb
Onion, garlic, red pepper, cheese for topping $10
Mancini Bucatini $9
